Peanut Butter Bunnies

A cleaner version of the classic peanut butter cup.

Makes: 6 large bunnies (makes more in a smaller mold)

Ingredients

  • 3/4 cup dark chocolate chips (I use Lily’s stevia-sweetened chips)

  • 2 Tbsp coconut oil

  • 2/3 cup runny peanut butter (I like a salted version; add a pinch of sea salt for unsalted pb)

  • 3 Tbsp coconut flour

  • 1 Tbsp maple syrup

  • Materials: Any shape silicone mold. Silicone is key so they pop out easily.

Instructions

  1. Melt chocolate chips and coconut oil together in a microwave-safe dish such as a glass measuring cup. Do this in 15-second intervals, stirring in between, until fully melted.

  2. Pour half of the melted chocolate into molds, just to cover the bottoms. Pop in the freezer to set for a few minutes.

  3. Mix peanut butter, coconut flour and maple syrup together. (Note: If your peanut butter is not runny, try microwaving with a tsp of coconut oil, then mix well.)

  4. Evenly divide the peanut butter mixture between the molds, spreading across the bottom chocolate layer.

  5. Top off the molds with the best of the chocolate. Refrigerate to set.
