Turkey Meatloaf

A paleo, leaner version of a childhood staple.

Serves: 4

Ingredients

  • 1 pound organic ground turkey (I typically use the 93% lean version)

  • 1/2 onion

  • 1/2 green bell pepper

  • 1 egg (or a flax egg)

  • 1/2 cup almond flour

  • 1/4 cup low-sugar ketchup (I use Primal Kitchen or Noble Made)

  • 1/2 tsp garlic powder

  • 1/2 tsp dried basil

  • 1/2 tsp dried oregano

  • Salt and pepper

Instructions

  1. Finely dice and lightly steam the pepper and onion. You can just pop it in the microwave for a few minutes to soften.

  2. Combine all ingredients in a bowl and thoroughly mix.

  3. Form two small loaves on a parchment paper-lined baking sheet.

  4. Brush more ketchup on top along with Italian herbs.

  5. Bake at 375°F for 30ish minutes or until internal temperature of 165°F is reached.

NOTE: You can make one large loaf in a traditional loaf pan, but this will greatly increase cooking time. I prefer two smaller loaves to speed up the cooking time.
