Grilled Chicken Summer Salad

A refreshingly sweet and savory summer salad.

Serves: 1

Ingredients

  • 2 cups Lacinato kale, massaged in olive oil

  • 1/2 cup seasonal fresh fruit (I used peaches and blueberries)

  • Goat cheese (I like Vermont Creamery herb goat cheese)

  • Pecans or walnuts (sautéed in ghee or butter with a bit of honey and sea salt)

  • Grilled chicken

  • Dressing

    • Olive oil

    • Balsamic vinegar

    • Dijon mustard

    • Pinch of sea salt

Instructions

  1. Destem, chop and massage kale in olive oil to soften.

  2. Prep your honey butter pecans.

  3. Assemble, dress and toss the salad.
