Grilled Chicken Summer Salad
A refreshingly sweet and savory summer salad.
Serves: 1
Ingredients
2 cups Lacinato kale, massaged in olive oil
1/2 cup seasonal fresh fruit (I used peaches and blueberries)
Goat cheese (I like Vermont Creamery herb goat cheese)
Pecans or walnuts (sautéed in ghee or butter with a bit of honey and sea salt)
Grilled chicken
Dressing
Olive oil
Balsamic vinegar
Dijon mustard
Pinch of sea salt
Instructions
Destem, chop and massage kale in olive oil to soften.
Prep your honey butter pecans.
Assemble, dress and toss the salad.
