Mint Green Smoothie

 

This high-protein smoothie is a refreshing tropical twist on a traditional green smoothie.

Serves: 1

Ingredients

  • 1-2 cups coconut milk or coconut water

  • 1/2 lime, juiced

  • 1 Tbsp chia or ground flax seeds

  • 1 scoop (20+ grams) vanilla protein powder

  • Handful fresh mint

  • 1 cup greens (I like frozen kale and spinach)

  • 1/2 cup frozen pineapple

Instructions

  1. Combine all ingredients in a blender and blend for about a minute.

Notes: If using a high-speed blender like a Vitamix, add your ingredients in the order listed. You want to start with liquids, then powders, then fresh produce like greens, then frozen.

I recommend using a paleo protein powder for an optimal amino acid profile. This one and this one are my favorite.
