Cauliflower Pizza Crust
This light and fluffy pizza crust is a high-fiber, low-carb option to be topped to your liking.
Serves: 1 pizza
Ingredients
1 ½ cups cauliflower rice
2 eggs
2 tbsp olive oil
2 tbsp coconut flour
½ tsp garlic powder
½ tsp dried oregano
¼ tsp pink salt
red pepper flakes (optional)
¼ cup shredded mozzarella cheese (optional)
Instructions
Preheat oven to 400°F.
Steam or microwave cauliflower rice to soften and thaw if frozen.
Strain cauliflower rice using a nut milk bag, dish towel or fine strainer. Press cauliflower to extract as much water as possible.
Add strained cauliflower rice to a bowl with all the remaining ingredients.
Press the dough into a circular pizza crust shape on a parchment lined baking sheet.
Bake for 25 minutes. Remove and add desired toppings. Cook for about 5 more minutes with toppings.
