Cauliflower Pizza Crust

 

This light and fluffy pizza crust is a high-fiber, low-carb option to be topped to your liking.

Serves: 1 pizza

Ingredients

  • 1 ½ cups cauliflower rice

  • 2 eggs

  • 2 tbsp olive oil

  • 2 tbsp coconut flour

  • ½ tsp garlic powder

  • ½ tsp dried oregano

  • ¼ tsp pink salt

  • red pepper flakes (optional)

  • ¼ cup shredded mozzarella cheese (optional)

Instructions

  1. Preheat oven to 400°F.

  2. Steam or microwave cauliflower rice to soften and thaw if frozen.

  3. Strain cauliflower rice using a nut milk bag, dish towel or fine strainer. Press cauliflower to extract as much water as possible.

  4. Add strained cauliflower rice to a bowl with all the remaining ingredients.

  5. Press the dough into a circular pizza crust shape on a parchment lined baking sheet.

  6. Bake for 25 minutes. Remove and add desired toppings. Cook for about 5 more minutes with toppings.
