Instant Pot Pork Carnitas
Tender and juicy pork carnitas, “slow” cooked to perfection.
Serves: 4-6
Ingredients
2-3 lb. pork butt, cut into cubes
1 small onion, diced
5 garlic cloves, peeled and smashed
1 orange, juiced
1 lime, juiced
2 tsp. cumin
2 tsp. chili powder
1 tsp. salt
Instructions
Cube the pork and set aside.
Chop onion and peel/ smash garlic.
Combine orange juice, lime juice and seasonings in a bowl.
Set your Instant Pot to Sauté. Add in pork and lightly brown pork on each side. Cancel Sauté when finished.
Pour the citrus juice and seasoning mix over the pork. Set Instant Pot to Pressure Cook for 30 minutes. Once finished, allow pressure to release naturally, or at least for 20 minutes.
Remove pork and shred with two forks, removing any large pieces of fat.
Serving Note: My favorite way to serve this is on Siete cassava tortillas with black beans, pineapple mango salsa, and a slaw. My go-to slaw is a bag of sliced cabbage, the juice of a lime, chopped cilantro, one jalapeno sliced thin, and a few big spoonfuls of Forager’s dairy-dree sour cream.
