Turkey Meatballs

A high protein, easy dinner or meal prep option.

Makes: 20-24 meatballs

(Yes, I know this is a lot of meatballs. But we’re going for multiple meals here. These freeze perfectly or you can cut this recipe in half if it’s too many… but good luck cutting 3 eggs in half.)

Ingredients

  • 2 lbs organic ground turkey (I like to use dark meat)

  • 3 pasture-raised eggs

  • 2/3 cup almond flour or meal

  • 1/2 - 3/4 onion, finely chopped

  • 1/3 cup freshly grated parmesan cheese

  • 1/3 cup parsley, finely chopped

  • 4 cloves garlic, finely chopped

  • 1 tsp sea salt

  • 1 tsp garlic powder

  • 1 tsp Italian seasoning

  • 1/2 tsp freshly ground black pepper

  • 1/4 - 1/2 tsp crushed red pepper

Instructions

  1. Preheat oven to 375F.

  2. Combine all ingredients in a bowl and mix well using a spoon or your hands.

  3. Either wear some latex gloves or coat your hands in olive oil. Form into balls and lay out on a parchment lined baking sheet.

  4. Bake for 20 - 25 minutes depending on size. You want the internal temperature to reach 165F.

  5. Serve however you like! I like to heat some Rao’s marinara in a sauce pan and add the meatballs in. Top with fresh parmesan or serve over some pasta. Enjoy!
